DIRECTIONS (Use these directions for all the variations below)

Fill a large pot with water and bring to a boil over high heat. Carefully lower eggs into boiling water and cook, undisturbed, for 11 minutes, 30 seconds. Meanwhile, fill a large bowl halfway with ice and add water to cover. Set the ice bath aside. Using a slotted spoon, immediately transfer cooked eggs from boiling water to the ice bath. Let the eggs stand until completely cooled, at least 5 minutes. Then peel the eggs. Working with 1 egg at a time, firmly tap on a flat surface until cracks form all over the shell. Peel under cold running water. Cut the eggs in half lengthwise and remove yolks. Set egg white halves aside. Using a fork, mash together yolks and mayonnaise (or other wet ingredients) in a medium bowl. Stir in the remaining ingredients minus the garnish. Spoon or pipe about 1 tablespoon filling into each egg white half. Add garnish if desired. Serve immediately, or store, covered, in the refrigerator for up to 3 days.
